Shelf Life

There are two aspects to shelf life. First is how long a product maintains its integrity and is free from spoilage. The second aspect is the sensory experience as it continues to be safe to eat. It’s the different “use by” and “best used by.” The second phrase refers to the optimal sensory experience.

We are working with Great Plains Laboratory to test our product over the next year. We freeze our product within hours of cooking to make sure it’s as fresh as possible and deliver it within days of that. Public information consistently identifies that cooked grains are generally suitable for 5-6 days in the refrigerator and six months in a freezer. So we can initially use that as our “use by” and “best used by” dates. However, we want to be scientific about it and give clear, tested guidance.

Over the next year, the lab will test a sealed bowl of the cereal and provide a panel of tests for bacteria, contaminants, and a sensory assessment. Once we identify those concrete milestones, we’ll put that information on the site and the packaging.
